Their dough is fermented for around 30 hours, then cooked in a wood-fired oven at around 420°C. The result is pizza with real texture, flavour and character, ready in around two minutes.

Horizon Pizza Co was built on obsession as much as appetite. After leaving a career as a jockey following injury, the founder threw himself into learning the craft of pizza making. That meant teaching himself the fundamentals, then travelling to Italy to better understand pizza at its source.
